- Granulated sugar: 700–750 grams (about 1.5–1.65 pounds), adjusted according to the fruit puree amount

Step 1: Wash And Prepare The Berries
1. First, we rinse the red currants carefully with clean water. Remove any leaves or unwanted pieces, but keep the small stems attached.
2. Keeping the stems is helpful because they will be removed later when we strain the cooked fruit. This saves preparation time and makes the process easier.
3. After washing, place all the red currants into a large cooking container.
Step 2: Slowly Cook The Red Currants
1. Add 250 milliliters of water to the saucepan. The water does not need to cover the berries completely. We only need enough water to lightly cover the bottom of the saucepan.
2. Heat the berries over medium heat until they begin to soften and release their natural juice. Then lower the heat and gently cook for about 20 minutes.
3. Stir the mixture from time to time with a spoon. The berries will slowly break down and become soft, creating a rich fruit mixture full of flavor.
Step 3: Make A Smooth Fruit Puree
1. When the berries are soft, remove the pan from the heat.
2. Place a fine sieve over a clean bowl or another container. Pour the cooked berries into the sieve, then gently press the fruit with the back of a spoon.
3. This step removes the stems and seeds while keeping the smooth fruit puree. Continue pressing until most of the soft fruit has passed through.
4. Once finished, measure the weight of the puree because this will decide how much sugar we need.
Step 4: Mix The Puree With Sugar
1. Place the red currant puree into a clean large saucepan.
2. Add the same amount of sugar as the weight of the puree. For example, if we have 700 grams of puree, we add 700 grams of sugar.
3. Stir the mixture well until the sugar combines evenly with the fruit. This balance helps create the right sweetness and texture.
Step 5: Cook The Jam Until Ready
1. Heat the mixture over medium heat and continue stirring often.
2. When the jam begins to boil, cook it for another 4 minutes. The mixture will become thicker and develop a glossy appearance.
3. Stirring during this stage is important because it helps the sugar dissolve completely and keeps the jam smooth.
Step 6: Check The Final Texture
1. To test if the jam is ready, place a small plate in the refrigerator before cooking begins.
2. After the jam has boiled for 4 minutes, place a small amount onto the cold plate. Wait about 1 minute, then gently push the jam.
3. If the surface wrinkles slightly, the texture is ready. If it remains too thin, cook for another minute and test again.
Step 7: Fill The Jars And Store
1. Prepare clean, sterilized jars before filling them.
2. Carefully pour the hot jam into the jars, leaving a small space at the top. Close the lids tightly.
3. The jam can be stored in the refrigerator, or we can use a water bath method for about 5 minutes for longer storage. Properly sealed jars can stay fresh in a cool, dark place for around one year or longer.
